What is the significance of knowing the fundamentals of cooking?
I don’t mean to sound like a cookbook, but you do need to know the basics.
I can’t overemphasize this enough: A recipe is merely a road map, not an unbreakable set of rules. If you want to add more or less of an ingredient, go right ahead. If you want to substitute something, be my guest. But if you don’t even understand the fundamentals (which include both techniques and ingredients), you won’t have a clue about what works and what doesn’t. And if you don’t understand the difference between kosher salt and table salt or between arborio rice and basmati rice, how will you ever be able to improvise?
Even worse, if you don’t know what goes into a dish — if you’ve never made it from scratch — how on earth are you going to figure out how to change it? How will you know what will work and what won’t?
A colleague of mine once told me that his wife makes all the decisions in their house. “But that doesn’t bother me,” he said. “I’m the one who makes all the wrong decisions.”

If you’re in college or grad school, or if you’re living alone for the first time, you probably don’t have much choice about cooking for yourself. Anyone can be a good cook if they know how to shop and how to follow instructions, but few people manage it. If you’re an experienced cook, this will be obvious to you. But if you’re new to cooking it might not be. And if you are non-technical and just starting a startup, the same principle applies.
A lot of people are scared to start a startup in part because they think they won’t be able to do it right. They think they’ll have to raise money, get office space, and hire people, and all this stuff that seems so hard that the mere thought of doing it makes them feel intimidated. But if there are two things we know about startups, they are:
1. Most startups that raise money end up failing.
2. Most startups don’t raise money.
So it’s actually more normal not to raise money than to raise money. And many of the most successful companies didn’t raise money at all at first: Microsoft, Google, Facebook… Even Apple raised money only after they’d been going for a while.
What is the first thing to learn in cooking?
The first thing to learn in cooking is not how to cook, but how to learn to cook. I mean that the first thing to learn is where to find the most accurate and comprehensive answers to whatever questions you have, and then how to tell the good answers from the bad ones.
The second thing is that the key question in cooking is “what do I want?” Not “what can I make?” but “what do I want?”. Like any other creative activity, cooking is ultimately about pleasing yourself. It’s not about impressing others, or about doing what’s expected of you. If you’re a student and your mother expects you to cook dinner for her every night, say “no.” If your friends at a dinner party expect you to serve them an elaborate meal, tell them they can go out for pizza if they want. The only person you are obliged to please with your cooking is you.
I learned this lesson by accident when I was getting started. My goal was not just learning how to be a good cook but also learning how to be a good writer. When I was growing up, my mother expected me to prepare meals for my siblings and myself on weekend days when she was working. I usually made pasta with butter or cheese and sometimes fried ham or sauteed vegetables. My youngest sister learned how to use the microwave oven so she could make popcorn or heat frozen dinners for herself and our older sister when we were all home alone together after school during junior high. I believe it’s good for teenagers to learn how to do something useful at home that they enjoy doing.

1. Toast. And not just press the button and wait, but adjust the timing so it comes out just right.

There are two ways to learn to cook: the way that involves poring over recipes and trying them out, and the way that involves following someone else around while they cook.
The first way is a lot more fun. But it’s also a lot less efficient because every recipe has to be tried once. The second way a beginner can cook is by
watching someone else do it, then gradually trying things themselves. If you follow an experienced cook around while they’re working, you can learn hundreds of cooking secrets in a few hours.
The most important rule in the kitchen is this one: Don’t get hurt. Everything else can wait until after you’ve mastered this. Most of what’s dangerous about cooking comes from hot things and sharp things and slippery floors.
So how do you acquire these skills? The way people acquire most skills: by doing them over and over until they become a habit.
To a novice cook, all recipes look hard. To a bad cook, everything is hard. The answer is: to start with something easy.
To get good at anything, you have to do it over and over again. In cooking, even more than most other things, this means you will quickly get bored unless the thing you’re working on is something that interests you. So don’t start by learning how to make creme brulee and then move on to souffles; they’re both hard, but they’re different kinds of hard. Start with something that interests you. If you like Mexican food, maybe start by learning a few basic sauces, or how to bake chicken in a clay pot. If you like Indian food, maybe start by making different spice mixes.
