Crockpot Chicken and Stuffing
It´s freezing outside, so it´s the perfect time to make a delicious crockpot meal. Crockpot Chicken and Stuffing is a family favorite. It´s easy to make and super tasty.
INGREDIENTS:
- 1 cup of chicken broth
- 1 can of cream of chicken soup
- 2 cups of shredded, cooked chicken
- 1 package of chicken flavored stuffing mix (6oz.)
DIRECTIONS:
- Combine broth, soup and chicken in a crockpot or large saucepan. Cover and cook on low for 4 hours, stirring occasionally. If using saucepan, bring to boil then reduce heat and simmer for 30 minutes, stirring occasionally.
- Prepare stuffing according to package directions. Spoon over chicken mixture in crockpot or saucepan. Serve immediately and enjoy!
You can make this using a regular baking dish as well, but I love using my crockpot. It seems to keep everything extra moist.

6-8 pieces of frozen chicken (I use a combination of breasts and legs because that’s what I had on hand)
2 boxes Stove Top Stuffing (I used the chicken flavor)
1 can cream of chicken soup (or equivalent amount of homemade)

I’ve read some recipes for a firmer stuffing, but I’m not sure about the science behind it all. Can you tell me what I need to do to make a really firm stuffing?
I have to admit that I am not a big fan of firm stuffing. It’s not that I don’t like them in principle, it’s just that I have never met one that I liked. As you know, I do most of my cooking in the crockpot. Usually, I have a few chicken breasts or pork chops in there, but when I’m at Costco I like to buy the big bags of frozen chicken and stick them in the freezer.
Every time I’ve tried to put the frozen chicken directly into the crockpot, it’s turned out pretty bad – tough and chewy. But if I thaw it out first, it comes out just fine.
Is this just because of how long it takes to cook? Is there some other trick to getting frozen meat cooked right in a crockpot? Or is it just impossible?
The only reason you don’t put frozen chicken in the crockpot is that it takes longer to heat up, and thus it will take longer for the food to reach a safe temperature.
If your chicken was frozen, then it was thawed at some point before you put it in the crockpot. According to the USDA, this means that you have 2 days from the time it was thawed to when you need to cook or refreeze it.
So if you decide to use frozen chicken in your crockpot, just make sure that it’s cooked long enough (which is not hard), and then enjoy.
How to Make Crockpot Chicken and Stuffing
The beautiful thing about crockpot chicken and stuffing is that it requires little preparation. You can set everything up the night before, put it in the crockpot, and go on with your day. The crockpot will do all of the work for you.
You will need:
- 2 10.75-ounce cans cream of chicken soup
- 1 box of stuffing mix
- 4 large skinless, boneless chicken breast halves
- 2 cups of water
- Grease the inside of a crockpot with butter or nonstick cooking spray.
- Add one can of cream of chicken soup to the bottom of the crockpot.
- Put one box of stuffing mix on top of the soup. Try to spread it out as evenly as possible, but don’t worry about it too much; it will eventually mix together. (If you want to try something different, you can use rice instead.)
- Lay four large skinless, boneless chicken breast halves on top of the stuffing mix and soup combination. Again, don’t worry about spreading them out perfectly; they’ll all get cooked eventually anyway.

How to store Chicken and Stuffing?
If you want to store some cooked chicken with the stuffing that you made for Thanksgiving dinner, should you store them together?
I would think it’s better to store them separately. I would assume that the chicken and stuffing will still be in the refrigerator for several days after cooking, and I don’t think it’s a good idea to have them touching during this time.
We have a whole lot of chicken and stuffing leftover from thanksgiving. How long can we keep it in the fridge?
A few days is fine; anything longer and you should freeze it.
The turkey, meanwhile, should go in the fridge immediately after dinner (or even sooner). It will stay fresh — and safe to eat — for three to four days.
If you want to keep it longer than that, carve off the meat and store it separately in airtight containers. It will last for several months in the freezer.
I am going to have a large family gathering this weekend. I want to make the stuffing and chicken ahead of time so that I can relax and not worry about cooking on Saturday. Can you tell me how long I can keep the chicken in the refrigerator and how long I can freeze it? What is the best way to store stuffing?

You can freeze chicken for up to 9 months, but it may not taste as good after more than 4 months. For best quality, store frozen chicken in its original wrapping or a freezer bag. Make sure there’s no air in the package before sealing (squeeze it out). If you’re freezing juices (for stewing), leave about 1/2 inch headspace between the top of the container and the liquid level. That allows room for expansion during freezing. Stuffing should be cooked right away, even if you plan to freeze it. It will keep 2-3 days refrigerated or 1 month in the freezer.
