How to prepare chilies?
Chilies are a great ingredient to add spice and flavor to any meal. You can find chilies in many different colors, like green, red, or yellow. Chilies add a great kick to pasta sauces or soups. Regardless of what you are making, you will want to prepare your chilies before adding them to the dish you are making.

Prepare the type of pepper you have.
Wash your hands thoroughly with soap & water after handling chile peppers. Be sure that you do not touch your eyes or face during this time. Wear disposable gloves if you are concerned about exposure.
Slice off the top of the peppers and slice each one opens lengthwise into two halves.
[1] If you desire milder heat, remove the seeds and inner ribs from inside of each half using the tip of your knife.
[2] -If you want more heat, leave the seeds & ribs inside of the peppers or consider using habanero peppers instead.
[3] -Cut them into rings by cutting vertically down through the center of each half in ¼ inch (0.6 cm) slices.
[4] -You can also chop them up into small pieces if desired.

I’ve never been to New Mexico – but I have had a lot of green chile in my life.
-When I moved to the Bay Area, I was surprised at how many restaurants made green chiles their own specialty. When it comes to green chiles, though, my favorite place is still Albuquerque.
I lived in Albuquerque for the first ten years of my life and then moved away. -One of the things that I remember most about Albuquerque is the smell of roasting chile peppers. During late summer & early fall, when the chiles are harvested, you can buy fresh roasted chiles at any grocery store, restaurant, or street-side stand. The smell of roasting peppers always brings me back to my childhood in New Mexico.
How to Roast Fresh Chile Peppers?
Pepper plants produce an abundance of peppers during a single growing season. This increases the chance that some of these peppers will be eaten by animals or insects before they can be harvested. So pepper plants contain chemical compounds called capsaicinoids that give them their heat and make them taste spicy. These compounds act as a deterrent to animals and insects, which might otherwise eat all of the plant’s fruit before it has a chance to reproduce itself with seeds.
Roasting fresh chile peppers is a very simple and easy way to enjoy this vegetable in its freshest form. It is also the most common way to cook chile peppers if you want to add them to a salad or salsa.
The simplest method for roasting fresh chile peppers is by using the heat from your oven. -To do this, first, preheat your oven to 450 degrees. While it is heating, wash and dry the chiles, then place them on a baking sheet. Place the baking sheet into the oven & roast the chiles for about 15 minutes, turning every five – minutes or so until they are evenly charred (see photo).

How to store and select chile peppers
Chile peppers are sometimes referred to as hot or chili peppers. They can be red, green, yellow, orange, purple, or brown when ripe. In addition to the fresh form, they are available in dried, powdered, canned, and pickled forms.
Selection:
– Look for firm chile peppers that are brightly colored, glossy and smooth with thick flesh.
– Avoid those that are shriveled, have soft spots, or show signs of insect damage.
– The color of the pepper is not a definitive indicator of its heat level. For example, some jalapeños are red when ripe while others may be green; ancho chiles are dried poblanos which turn dark brown/black; cayenne chiles can be red or yellow-orange.
Storage:
– Place peppers in a plastic bag and refrigerate them in the vegetable crisper for up to 10 days.
– To freeze, wash and dry them thoroughly, then place whole or sliced peppers in plastic storage bags & freeze for up to 1 year.
Chile peppers are available in a wide range of colors, shapes, and sizes. Some varieties are short and squat; others long and thin. They can be yellow, orange, or red.
In the United States, chile peppers are classified as sweet or hot (pungent). The sweet varieties have less than 100 Scoville heat units. The hot varieties have 1,000 to 5,000 Scoville heat units.
When purchasing fresh chile peppers, select ones that are firm and fresh-looking with smooth skin, avoid those that are wrinkled or blemished.
To store chile peppers for up to one week, place them in the vegetable crisper section of the refrigerator. For longer storage up to one month, freeze them whole or cut them into pieces on a cookie sheet. -Once frozen solid, transfer them to freezer bags.

Chile peppers make up one of my favorite types of food. I like almost all types of chile peppers, but my favorites are aji, habanero, and jalapeño. Aji is one of the most common types of chile pepper in South America and is popular in Peruvian cuisine. I like their taste, and they have just the right amount of spice that I am looking for. Habaneros have a very high heat level compared to other chile peppers; however, they also have a wonderful flavor that makes them worth it. They are difficult to find in restaurants, so I usually buy them at specialty stores when I can afford them. Jalapeños are the most popular type of chile pepper. They are very cheap, which is nice for me since I eat so many of them on a regular basis.
If you want to try cooking with chiles yourself, you do not need any special equipment or recipes to start out with—just buy some fresh ones from your grocer’s produce section and give it a go! It might be a good idea if you start off by using jalapeños since they aren’t too spicy yet still flavorful enough that anyone can enjoy them without being overwhelmed by heat or unfamiliar.

The best way I know to use hot peppers is with chocolate.
I don’t mean like chocolate with a little cayenne pepper or some other hot spice in it. I mean real hot peppers and real chocolate together – something like a dark chocolate bar with habanero and chipotle chopped up and mixed into the chocolate while it’s still warm, then left to solidify. The combination of the heat and chocolate is just amazing.
I think my favorite would be a dark chocolate, then maybe 70% cocoa content, but that’s just me; you might prefer 55%. If you want it really intense, you can add hot peppers until you’ve reached whatever level of heat you’re comfortable with.
I’m a big fan of hot peppers. My favorite way to eat them is either fresh in a simple tomato sauce with pasta or as part of Korean kimchi, which I eat with anything.
I also love to use them in Thai-inspired salads: green mangoes, cucumbers, and carrots, with fish sauce, lime juice, and coconut sugar. You can add peanuts and diced chicken to make it more filling.
The best way to cut hot peppers is with kitchen scissors. It’s easy and surprisingly fast. Wash the pepper under running water before you cut it.
Finally, if you have some leftover hot peppers, try making makchang (막창).
