Why Use Olive Oil?
Every time I read the paper or turn on the TV someone is telling me that this food is bad for me or that another is a miracle cure for every disease under the sun. Normally I take little notice of this and eat the food I enjoy.
Olive oil is one of those healthy foods that have stood the test of time though and has been used and known as a healthy diet staple since Biblical times.
I could write a whole article on the health benefits that olive oil is reputed to provide but this isn’t my objective but I can tell you that it is not only cholesterol-free it is made up of seventy percent Monounsaturated fatty acids which also reduce the bad cholesterol in your body. It’s great for preventing constipation as it lubricates your intestines. These are just two of the health benefits of this versatile cooking ingredient but here we are going to talk about the culinary benefits.
I am going to discuss the three main types of oil; Extra-virgin, Virgin and Pure Olive Oil
Extra-virgin Olive Oil
This is the best quality olive oil and comes from the first pressing of the olives and is deemed to have a superior taste. In fact, some folks similar to wine tasters can tell the different kinds of olive oils and the quality of the oil by taste. It is a little bit more expensive buying extra-virgin olive oil but this is certainly the healthiest and tastiest of the oils.
Virgin Olive Oil
It has slightly more acidity than Extra-virgin and can contain no refined oil it has a good taste but not to the degree that extra-virgin has.
Pure Olive Oil
Is a blended mix of virgin and refined olive oil, pure olive oil is better for cooking at higher temperatures for instance deep frying because it has a much higher smoke point than the virgin olive oils? It also doesn’t have such an intense flavor.
I would always suggest keeping two types of olive oil in your kitchen, a good Extra-virgin and pure olive oil for cooking. It might sound an expensive option but one of the great things about olive oil is that you can reuse it up to three times, make sure that you don’t burn the oil though as this will not be reusable. Remember though that extra-virgin and virgin oils have a low smoking point so are best for sauteing over low heat or using in soups, sauces or salads.
Storing your olive oil correctly is important if you don’t want it to go rancid as it is fresh food. Ideally, you want to store it in a cool dark place or even in a fridge. Make sure that you keep it away from heat, you don’t want to store near your stovetop for instance.

Stop pre-made sandwiches from going soggy. To prevent lunchtime sandwiches from becoming soggy, spread both pieces of bread to the edges with butter, mustard or mayonnaise.
