It is hot season for me and a lot of my friends, my youtuber friends. So last year I know a few of my friends did croctober. So I knew this year. I definitely wanted to join into the fun and i’ve got the whole month of october already planned. All of my recipes planned i’m going to be doing main courses, side, dishes, desserts, breakfast, savory and sweet.

Also, a couple of dips and some drink recipes as well. So if you’re excited for october as much as I am then you’re definitely going to want to stick around if you’re new. I hope you do subscribe that bell notification, because i’ll be uploading every evening monday through friday for the whole month of october. So today is going to be a super simple one. This is a tortellini pasta dish in the crock pot.
That’s really really yummy and super easy to do so. If you want to see it then just keep on reading okay, so i’m hoping you can see everything okay. So, to start out with this recipe, we’re going to put in i’ve got to cut off the ends of these, but i’ve got a whole can of oh of artichoke hearts. I’ve got one very small can of sliced olives. I’ve got one and a half pounds of chicken thigh meat. Now you can use chicken breast if you want just one one to two pounds of chicken breast.
It’s up to you, but I decided to use chicken thighs. For this time i’ve got half of a yellow bell, pepper, i’ve got half of a red bell, pepper and then i’ve got one jar and then i’ve got one jar of spaghetti sauce. Now I decided this time to go with the classic home. My mom had this um at her house, so I decided we’re going to try it normally. I go with the progresso, but we’re going to give this one a go right now: okay, and then i’m also going to be putting in some sliced baby, bella mushrooms, probably about half of the package, i’m going to save the other half for another recipe.
That’s going to come up at the end of the week, okay, so i’m going to get these sliced up real quick, like I said, i’m just going to um lop off the ends and then toss them in so i’ll be back in just a second okay. So just in case I could see it in my screen. That’s a glare on my crock pot. It’s actually clean, it’s just just a glare from the light. Okay, we’re going to go ahead and dump in the chicken and then the sliced, olives, the artichokes literally just dumping, everything in okay and then the jar of spaghetti, sauce, okay and then the sliced mushrooms.
These are quite large, so i’m just going to kind of break it up just a little bit. Okay, oh some salt and pepper, give it another stir in okay. Now i’m going to go ahead and put this on low and i’m going to cook it for six to eight hours on low and just let stu and mary do their thing and take the will on this. We’re going to get that covered and we’re going to set that aside now, normally I get the refrigerated tortellini.
This is dry tortellini. They didn’t have any of the refrigerated one. So normally with this recipe, I would around the last 30 minutes chunk in the tortellini. But since since this is a dry one, i’m going to go ahead and wait and at the very end, i’m going to boil this up and i’ll put in the rest of my ingredients at the end. So we’ll be back in about six to eight hours. Once the chicken is done and we’ll be finishing up this recipe, okay, so it has been cooking for six hours straight and everything is done in there.

The peppers are nice and soft. So it’s all done so now. The next step go ahead and pour in this alfredo sauce in there and then we’re going to let it set for a minute and let it all just kind of come back up to temperature all in there and mixed up really good. Like I said we’re going to let that set and i’m going to go ahead, and – and this is the one that I had picked out this time – the cheese and spinach one – I thought it sounded really good.
So, let’s get this boiled up, okay, everybody! So that is all I have for you today, and this is what it looks like and you can also put on some fresh basil if you wanted to as well. This is a really great recipe. Is super simple and easy and it’s got that extra kick of the parm on top. It just gives it an extra bite so good, and then you can just serve this with some steamed asparagus or roasted asparagus or a side salad.
